Andres Cardona took on a special project for this particular coffee lot. Grown at the high altitude of 1600 meters above sea level, this slows the ripening of the coffee cherry before it is harvested, which can often times return a sweeter coffee profile opportunity. Sometimes coffee can be grown even higher yielding a larger opportunity for sweetness. Beyond what the climate gave this coffee, Andres took this coffee and came up with an extended anaerobic fermentation with coffee cherry juice. This gives a filtered brew a balanced cascara profile along with its balanced citrus and winey tastes.
So far with our experience, this coffee brews best under a filtered method that requires a finer grind. This could be lower brew volumes or devices like a Kalita Wave or V60. This also serves well as an espresso.
